FRESH RECIPE: Beer Cheese Soup & Broomstick Breadsticks

I LOVE HALLOWEEN! Every year I throw a costume party for my girls and their friends just so I can go crazy with themed foods.

A STAPLE on the Menu is my Vegetarian Beer Cheese Soup.

INGREDIENTS:
4 cubes vegetable bouillon
1 (12 fluid ounce) can or bottle Yuengling beer
4 cups water
1 large potato, peeled & quartered
2 stalks celery, halved
1 large carrot, peeled 1 small Vidalia onion, halved
1 (20 ounce) package frozen broccoli & cauliflower
2 (10.75 ounce) cans condensed cream of broccoli soup
1 pound processed cheese food (eg.  Velveeta), cubed

DIRECTIONS:
1. In Tupperware QuickChef chop potato, celery, onion and carrot, set aside. In a Tupperware Chef Series 6 qt Dutch Oven over medium high heat, dissolve the bouillon in the beer and water. Add the potatoes, celery, carrots and onion, mix well and allow to cook for 15 to 20 minutes.
2. Stir in the broccoli and heat for 10 more minutes. Finally, add the condensed soup and the cheese. Reduce heat to low and allow the cheese to melt, stirring often.

Last year I also started added these ADORABLE Broomstick Breadsticks. To make you need 2 types of dough. Personally I used regular Pizza Dough and Whole Wheat Pizza Dough (thank you Trader Joes!)
Then just rolled out dough, cut into strips, twist and mold until they look at broomsticks. Then bake until brown.
