Chocolate Vanilla Swirl Cakes

Chocolate Vanilla SWIRL Cupcakes & Mini Cake

My daughter had an end of year party and unsure of whether I should do Chocolate or Vanilla, I decided on BOTH!

FOR THE CUPCAKES:
I just combined a heaping spoonful Devil’s Food Cake Mix (prepared according to package instructions) and Yellow Cake Mix (also prepared according to instructions) in the cup pan.  One scoop positioned on the left side, one on the right.  Then I took a toothpick and swirled them slightly to combine.  Bake according to instructions and set aside.

Basic Cream Cheese Frosting

1 8 oz package reduced-fat cream cheese, softened
1/2 C  Sugar
1 tsp Vanilla
1/2 tsp Almond Extract
3 Cups Heavy Cream

Cream sugar, cream cheese, and flavorings  in Tupperware’s WHIP N PREP until light and fluffy. Then slowly add heavy cream until desired consistency.

For this recipe I made 2 batches of the frosting.  One with just Vanilla (omit almond), One where I added 2 TBSP of Cocoa.

Once the 2 icings were made, I used my spatula and filled the left side of my Squeeze it Decorator with the Vanilla, and the right side with the Chocolate. (TIP WHEN FILLING, place your decorator upside down resting in a cup to easily fill)

Then, all you need to do is DECORATE!

FOR THE MINICAKE!
I took 1/2 cup of the Devils Food batter and 1/2 cup of the Yellow Mix and poured into a lightly sprayed Tupperware Soup Mug.  Then I cooked in the microwave (YES THE MICROWAVE!) with the SEAL OFF for 2 mins.    (you know when its done when the cake is seperating from the sides)   Then I flipped it out on a MINI CAKE TAKE and iced with the cream cheese frostings just as I did the cupcakes.  SOOO SIMPLE, YET SOOOO GOOD!

****ADDED TOUCH **** Since I made these for the daughter’s end of year party, I took an assortment of sprinkles with me to her class. Then I let her and her classmates decorate their cupcakes as an added fun filled memory and close to their school year 🙂
