More FRESH for our Kids! *Cereal Bars*

As I mentioned in my first FRESH for our Kids post, my youngest is a constant eater. So having healthy snacks on hand is a must!  My mission:  to find and create recipes that are COST effective, high in fiber, low in sugar, have no artificial sweeteners or colors and no trans fats  . . .  finger bars for little ones that kids of all ages can also enjoy.

Banana Craisin Cereal Bars

1/4 cup craisins (for younger babies I suggest chopping into smaller pieces)
2 mashed ripe bananas (i used organic)
4 cups oat cereal (I used Whole Hearts by Quaker since I had samples from a promo with Tupperware)
1/2 cup organic almond butter
2 Tbsp milled flax seed

Preheat oven to 375 degrees.

Put bananas in a food processor (I used Tupperware’s Quick Chef Pro) and mix until a “mashed” consistency. Then, combine rest of the ingredients and chop til combined and desired consistency. (I chose to coarsely chop the cereal so that when tiny hands and mouth ate it, it wasn’t too much to bite off or swallow. Feel free to just mix if you want the cereal whole.)

Press into a 9×9 pan. I lined mine with Tupperware’s Silicone Wonder Mat – though parchment paper or aluminum foil also work.

Bake for 25-30 mins then cool down and cut into 10-12 4 oz toddler sized bars.

Feel free to cut into larger 8 oz portions for older kids and adults.   ENJOY!
