FRESH Thought ~ Green Tomatoes

I have always wanted a backyard garden.  Growing up my Grandparents (on both sides of my family) had the MOST AMAZING gardens!  One of the fond memories I have is eating Tomato Sandwiches in the Summer months.

So I sought out this year to grow my own.  I planted Husky Cherry tomatoes, Yellow Heirloom, Big Boy and a Plum Hybrid.  With the rain in the Carolina’s my crop was growing like wildfire! I was so excited and imagined all the amazing Gazpacho, Caprese Salads and Pasta Sauces those tomatoes would become.

I had put up netting to help keep the birds out, but one thing I was not expecting was squirrels. Squirrels so ruthless and sneaky that everything I tried to keep them out failed . . . to date . . . I have lost over 25 of my beautiful crop!

Now not all of the tomatoes knocked off the vines were bitten and chewed. Some where just casualties from their pouncing and attempts to take others.  Since I could not justify throwing those out, I starting searching for new recipes using GREEN TOMATOES.  I hope you enjoy them as much as my family did.
