What’s For Dinner?

Do you ever have those nights when the pantry is starting to look a little dry?
Or you just have something in the fridge that needs to be utilized before it dies?

Well tonight was one of those nights in my home.  Not because my food was dying,  (Between my Modular Mates and FridgeSmart I rarely every throw food away!) but because nothing was calling out to me.  What was I going to make for dinner??

Finally I light bulb went off.   I did have some fresh broccoli in the fridge, and my 4 year old LOVED Casseroles.  So Broccoli Rice Casserole it was!   Only one thing – – I DO NOT like Cheese Whiz!  YUCK! So here is my recipe playing off a few different ones I googled.

Broccoli Cheese Casserole

  • 10 ounce chopped broccoli, steamed
  • 2 cups cooked rice
  • 1 1/2 cup shredded cheddar cheese (I prefer 2%)
  • 1 cans  cream of mushroom soup
  • 1 small onion, chopped
  • small can mushrooms
  • 2 tablespoons olive oil
  • 1/2 tsp italian herb seasoning

Directions:

 

TO PREP: I steamed the Broccoli first in my Tupperware SmartSteamer

And Cooked the Rice is my Microwave Rice Cooker

 

  1. Cook onion in olive oil in the ChefSeries 3 qt Saute Pan until soft.
  2. Stir in the milk, soup, 1 cup cheese, italian herb and rice.
  3. Add broccoli and mushrooms.

  4. Top with crushed croutons and 1/2 cup cheese
  5. Bake at 350 (uncovered) for 30 mins.
