FRESH RECIPE: BBQ Chicken, Green Beans, & Quinoa


Have your ever done a meal plan that requires a CLEAN DIET?  Commit to programs like the Whole Life Challenge or P90X  is a huge step to better health –  but measuring and planning your meals can be daunting – – especially when the hustle and bustle in life gets in the way and the temptation of convenience (FAST & Prepackaged, Processed Food) grows strong.

So . . . Here is a HEALTHY MEAL that you can store in the Fridge for 3 days or Freeze for 3 months.  That way you can have healthy options even with time is limited.  The best part is ~ Most of the meals make multiple portion and they are simple and take little time to do 🙂

BBQ Chicken, Green Beans & Quinoa    yields 2 servings

6 Chicken Tenderlions (frozen or fresh)
2 Tbsp BBQ Sauce
2 cups Frozen Green Beans
1 cup Cooked Quinoa(any variety you choose)

1st: Marinate the Chicken in the BBQ Sauce for a few hours.  (I put the strips into a Tupperware SeasonServe before heading out to a meeting, when I came back a few hours later, I prepped the meal.)

2nd: Prep/Cook the Quinoa.  Depending on how many meals you are prepping, determines how much you will want to cook.  I cooked 1 full cup work which yielded 3 cups so that I could use it for Dinner as well as for the meals.  Personally I used Tupperware’s Microwave Rice Maker to make mine ~ Just add the same water/grain ratio that the package suggests, cook on high for 8 mins, then let sit aside until all grains are absorbed.

NEXT: STEAM the Chicken in Tupperware’s SmartSteamer  (you can also cook in the microwave or stovetop, but the SmartSteamer requires no additional Fats, is easy to clean, and also allows me to good my green beans at the same time.

THEN: Assemble!!    If you are planning to FREEZE the meals, and you are using Frozen Green Beans, you do not need to recook the beans before portioning.

If you plan to refrigerate as you will be eating in the next 3 days, then you can let them steam on the top tray of the SmartSteamer when cooking the chicken, or just plate as is.

Reheating Instructions:

FROM FRIDGE: Microwave on HIGH for 3-4 Mins until heated through

FROM FREEZER: Microwave on 70% power for 4 – 6 mins until heated through
