FRESH RECIPE: Southwest Quinoa Salad

SW Quinoa SaladIt’s official!!  I have fallen in love with Quinoa!  Ever since I got my Healthy Start Cookbook from Tupperware I knew that Quinoa was a super food ~ gluten-free, high in fiber, and packs a whopping 12-18 percent protein ~ but I had not really cooked with it . ..  until lately.

I am soooooo excited to share with recipe with you as I have been eating it everyday (yes everyday) for the last week!  It’s good alone, or on a bed of greens with avocado, even in a soft taco with fish or a protein of you choice.  TRY IT, and please, tell me what you think!

Southwest Quinoa Salad

2 cups cooked Quinoa
1/2 each Red, Yellow, and Orange Pepper, diced or chopped  (total of 1 1/2 cups)
1 can black beans, rinsed and drained
2 green onions, rinsed and chopped
1/2 cup chopped FRESH cilantro

Dressing:2 T fresh squeezed lime juice (or lemon) (typically 1 whole)
1 Tbsp Southwest Chipotle Seasoning
1/3 cup extra-virgin olive oil
1) Cook your Quinoa.  Personally I made mine in Tupperware’s Microwave Rice Maker.  ~3/4 cup quinoa to 1 1/2 cups water.  Cover and microwave on high for 6 mins.  Set aside and let hydrate until all water absorbed. Typically done in the time it takes to prep the rest 🙂

3)Rinse Black Beans

4)Mix Dressing

5)Stir all ingredients together, pour dressing until all is wet (you can reserve more for later) and refrigerate until time to serve.  **The more it sits, the more the flavors meld and YUMMO, you are going to LOVE IT**
