July is here and with it the RUSH of summer. Typically summer is jam packed with weekends on the lake, vacations, BBQ’s and More. I mean it is the middle of summer complete with 4th of July. July is also my 18th Anniversary in Tupperware ((I know, I know, time really does FLY!)) so to celebrate is are Four Fresh Summer Tips.
PAUSE FOR A DIGITAL DETOX!
Turning off your smart phone is an easy way to take a digital vacation and honestly great for YOU and YOUR SOUL. How many times have you heard someone say they don’t have time for themselves? Yet, they spend hours on Social Media just scrolling and watching videos. Studies show the constant blue light is NOT good for you. Check Tip 2 for why. So put on Do Not Disturb, Purposefully put the phone away and take time to pay attention to what is happening around you and in your environment.
Let GO and Breathe in the SUN.
When’s the last time you took a real break and sat in the sun? I mean laid back like in a hammock or reclining in a chair? Studies show that your retina’s exposure to sunlight increases the brain’s release of a hormone called serotonin. (Yes, close your eye – PLEASE) Serotonin is a HAPPY chemical, boosting mood and helping a person feel calm and focused. We all need time to unwind, relax, and daydream. Let go of the stresses you may be feeling and take 15 mins in the morning or afternoon outside in the sun. I am serious – STOP AND SMELL THE ROSES – or listen to the birds chirp. 🙂
KEEP UP WORK PRODUCTIVITY . . .
by organizing your space. Whether you work from home, or work in an office, summer is a great time to give your eyes a rest and clean up the clutter. Yep – just like how we eat with our eyes and plating our food is essential – so is where you work. I know physical clutter only makes the clutter in my head worse and the only way to fix the sea of sticky notes, invoices, unwritten cards, to do lists, etc etc is to remove it. Personally I use an IN BOX/OUT BOX where I literally but it ALL into the inbox so I can start FRESH. Then, I take a few mins each day before walking away to go through what’s in the box and give it a home. If you have more time when organize your space do it then. I personally have found I am more productive in finding the best homes for the clutter after I feel accomplished with my work tasks.
CLEAN UP BEFORE VACATION and EASE BACK IN AFTER.
Never leave for a trip without cleaning up. Coming home from a vacation to a sink full of dishes, full trash cans and piles of laundry is the last thing you want or need. You already will have the laundry from the trip that needs to be done as well as unpacking. As a parent I personally know the feeling of needing a vacation after your vacation. I also know how it feels when I do not unpack right away and the chaos of living out of my suitcase and my home collide. Give yourself a day, if possible, to retain order by unpacking and resetting so that the calm you felt while you were away (hopefully lol) translates as you get back into the swing of things. Also, try not to schedule a packed day full of meeting the first day you are back at work. Give yourself time blocks to answer those emails and voicemails.

Today, I got to the spend the afternoon with one of my friends from WBTV Charlotte, Delano Little, helping him love his new Tupperware Products and Meal Prep like a champ! Here are the recipes for Chicken Parmesan Meatballs and Pasta, BBQ Chicken, and Salmon with Mediterranean Veggies we made using Tupperware’s Pressure Cooker, Fusion Master and MicroPro Grill. I hope you enjoy them as much as he did! And I also help you have as much fun!
Chicken Parmesan Meatballs with One Pot Pasta
Meatballs 1 lb Boneless skinless chicken breasts, cut into cubes 2 cloves Garlic, peeled 1/2Onion, peeled & quartered 3/4 cup Breadcrumbs 1 tablespoon Italian Herb Seasoning 1 Egg, beaten 1 cup Parmesan Cheese, grated
Assemble Fusion Master™ with coarse mincer disc and place medium bowl underneath hopper.
Fill hopper with chicken and turn handle to process. Once there is room in the hopper, add garlic and onion, followed by more chicken. Continue processing until all chicken, garlic and onion is processed.
Add breadcrumbs, seasoning, egg, and parmesan to chicken mixture and stir to combine.
Form mixture into meatballs.
Place meatballs on top of pasta/sauce in Microwave Pressure Cooker.
Seal and microwave on high power 16 minutes.
Pasta and Sauce 1/2 onion 1 garlic clove
Chop in Tupperware’s Chop n Prep Chef and place in Pressure Cooker Base.
Then add, 8 oz pasta 24 oz jar marinara
1 cup broth or water
1 tsp Italian herb seasoning
Place meatballs on top of pasta in the Tupperware Pressure Cooker, seal and cook for 16 min.
6 chicken breasts*
2 cups of your favorite bbq sauce
1 cup diet soda
Put chicken in base of Tupperware Microwave Pressure Cooker. Add bbq sauce and soda. Seal and microwave on high for 30 minutes.
Take our of the microwave and allow pressure to release naturally until red pressure indicator fully lowers, about 10 – 15 minutes.
Drain off excess liquid.
*6 pork loin chops can be used
1 tsp. plus 1 tbsp. extra virgin olive oil, divided
1 pint cherry tomatoes, halved
1 cup chopped zucchini
½ cup chopped eggplant
¼ cup golden raisins (optional)
2 tsp. chopped fresh rosemary
2 garlic cloves, crushed
¼ tsp. coarse kosher salt
4 (4 oz./115 g) salmon fillets, skin-on
In a large bowl, toss together 1 tsp. of the olive oil, cherry tomatoes, zucchini, eggplant and raisins until well coated.
Transfer vegetables into the base of the MicroPro™ Grill. Microwave on high power 5 minutes with the lid in the grill position.
Remove from microwave; transfer vegetables back to the same bowl. Fold in rosemary and salt; set aside.
Brush salmon on all sides with remaining olive oil. Place 2 salmon fillets in MicroPro™ Grill, skin side up, with lid in the grill position. Microwave on high power 4 minutes. Remove salmon, sprinkle with coarse kosher salt to taste. Repeat with remaining salmon fillets. Serve warm with vegetables.

I don’t know what it is about quiche, but it is one of my all time favorite comfort foods. My mom used to make them often growing up – from swiss to sundried tomato, to broccoli. This recipe is so simple using Tupperware’s new MicroPro Grill and I know it will make your stomach smile like it did mine!
Grilled Veggie Quiche
1/4 cup onion
1/2 asparagus chopped
1/2 cup eggplant
1/2 cup zucchini
1/2 cup milk
1/2 cup parmesan cheese, shredded
1/2 cup mixed cheese blend (your choice – for this recipe I used cheddar and gouda)
1/4 tsp oregano
1/8 tsp garlic
salt and pepper to taste
1 Uncooked Pie Shell
Grill asparagus, eggplant and zucchini in Tupperware’s Micropro grill for 5 minutes. Mix the onions with the grilled veggies. Combine eggs, milk and seasonings using Tupperware’s Quickshake Container. Fill Pie with 1/4 of the cheese, followed by the veggie blend, then the egg mixture, and top off with the remaining cheese.
