Cauliflower Tortillas

Cauliflower is often used as a rice replacement for stir fry and meal prep. Full of nutrients and low in calories it is a healthy and smart substitution. It can be used to make simple, yummy tortillas as well!  Combined with fresh lime and cilantro these cauliflower tortillas are a must for a Keto Friendly, Low Carb Taco Tuesday.  Check out my live video and let me know what you think 🙂

Cauliflower Tortillas

Ingredients
  • 2 large eggs
  • 2 cups riced/or grated cauliflower (about 3/4 head)
  • 1/4 cup fresh cilantro
  • 1/2 lime, juiced and zested
  • salt and pepper to taste

Fresh Recipe: Salsa & Guacamole

Who doesn’t love salsa!!  This week on Fresh Tip Tuesday I had a special guest and we made Tupperware’s Party Favorite: Simply Salsa.  We then took that salsa base and made my FRESH version of Avocado Fresco.  Both recipes are listed below, try them out and let me know what you think!  Remember, we can always come do a Salsa Sensation for you in your home and earn you Tupperware for FREE!!!

Simply Salsa

Ingredients
1 medium onion
1/4 cup fresh cilantro
2 cloves garlic
Juice of 1/2 lime
1 (15 oz.) can diced tomatoes
1 Tbsp. Southwest Chipotle Seasoning Blend (schedule a DIY spice class to learn how to make this)

Directions

  1. Peel and slice onion into 4 pieces; place in PowerChef with blade attachment.
  2. Peel and smash two garlic cloves, add along with the cilantro, cover and pull cord until all is combined and roughly chopped.
  3. Add remaining ingredients; cover and turn handle until desired consistency. Remove blade and place salsa in Snack Cups or a bowl for serving. Serve with chips or as a topping for tacos!

Recipe Variations: Add in (15oz) can black beans to salsa mixture. For spicier salsa add sliced jalapenos or hot sauce.

 

Avocado Fresco

Ingredients
1 medium tomato, quartered
½ small onion, peeled and halved
¼ cup fresh cilantro
Juice of 1/2 lime
2 Haas avocados, pitted and peeled

Instructions

  1. Place tomato, onion and cilantro into base of Power Chef™ System fitted with blade attachment.
  2. Cover and pull cord several times to roughly chop.
  3. Add avocados and lime and pull cord to blend until desired consistency is achieved.

Fresh Recipe: Apple Cake

Today at our Studio in Charlotte I made this super yummy Apple Cake for Fresh Tip Tuesday!   Best part is, it takes less than 15 mins and is so good its scary good LOL!  I also shared some great apple facts. Which one is your favorite?

Apple Cake

1 (14 oz) can apple pie filling or 2-3 apples, peeled, cored and sliced.
1/4 cup brown sugar
1/2 tsp cinnamon
1 egg
2/3 cup flour
2/3 cup sugar
2/3 cup milk
1 tsp. oil
2 tsp baking powder

 

  1. Pour apple pie filling or sliced apples into base of the MicroPro Grill.
  2. Sprinkle brown sugar and sinnamon over the apples
  3. In a medium bowl, mix together remaining ingredients, pour over apple mixture.
  4. Place cover in CASSEROLE position and microwave on high power for 15 mins. Serve Warm. (with whipped cream!)
