Fresh Recipe: Jackfruit Buffalo Dip

One of the most popular dips to bring to a potluck, tailgate, house party, etc is Chicken Buffalo Dip. This Jackfruit Buffalo Dip gives the same taste and texture you love about the meaty version! When using my Fresh Product Picks from Tupperware, you will have it ready to share and enjoy in only 10 minutes.  Give it a try and let me know what you think!

Jackfruit Buffalo Dip

Ingredients
  • 8 ounces cream cheese softened
  • 1/2 cup hot sauce (I prefer Franks Red Hot)
  • 1/4 cup ranch dressing
  • 20 oz can jackfruit in brine,drained
  • I block of cheddar cheese, shredded
  • 1/2 cup chopped green onion
  • Celery
  • Tortilla Chips

Instructions

  • Using your GrateMaster Shredder from Tupperware, grate cheese. (Or whatever you have to grate your cheese)
  • In the PowerChef System, shred jackfruit and put aside in a bowl.  In the same PowerChef, then combine cream cheese, hot sauce, and ranch dressing until smooth.
  • Add the mixture to the bowl(or back in the powerchef to save on dirty dishes) with shredded jackfruit along with 2 cups of the cheddar cheese, green onion, and stir to combine.
  • Transfer the mixture to the MicroPro Grill and smooth out. Microwave for 6 mins in the Casserole Position. Remove, then add remaining cheddar cheese and put back in the microwave for 4 mins to melt.
  • Remove  and serve warm sprinkled with chopped green onion alongside celery and tortilla chips for dipping.

Fresh Recipe: Zoodles with Peanut Sauce

Today for Fresh Tip Tuesday we made Zoodles with a Peanut Sauce. Zucchini is one of my favorite summer food since it contains zero fat, and is high in water and fiber. It also contains significant amounts of vitamins B6, riboflavin, folate, C, and K, and other minerals.  I love ethic foods and in particular today, Thai Noodles with a peanut sauce.  This is a healthy twist that I know your family will love.  Watch the clip, try it out and let me know what you think.

Zoodles with Peanut Sauce

Ingredients:

  • 3 medium zucchini spiralized
  • 1-2 carrots spiralized or shredded
  • 1 tsp toasted sesame oil
  • optional: 1 red pepper spiral sliced
  • chopped unsalted roasted peanuts and lime wedges (use as a garnish)

thai peanut sauce

  • 2 green onions
  • 1/4 cup creamy peanut butter use unsweetened if eating low carb
  • 2 tbsp low sodium soy sauce
  • 1 tbsp seasoned rice vinegar
  • 1 lime zested and juiced
  • 2 tsp freshly grated ginger (or ginger paste)
  • optional:  ¼ teaspoon red pepper flakes or sriracha

Directions:

    1. Spiralize the zucchini and carrots into the base of the Smart MultiCooker.   Drizzle with 1 tsp of sesame oil and cook for 3 mins in the Microwave. Drain zucchini noodles if excess water is observed.
    2. In the Tupperware PowerChef, chop the small onions (about 3 pulls) then additional sauce ingredients. Pull until smooth. Taste and adjust as needed.
    3. Add 1/2 of the sauce to the carrots and zucchini noodles. Toss noodles in sauce until evenly coated. Add more sauce as needed. Garnish with cilantro and peanuts before serving.

Yep –  It really is that simple! ENJOY!!!!

Fresh Recipe: Unicorn Pinata Cupcakes

What can I say, my daughter LOVES unicorns.  So for Fresh Tip Tuesday I shared a super simple unicorn pinata cupcake recipe.  Did you know cupcakes were first invented in 1796 by Amelia Simmons? This icing is incredible, light and easy to make.  This version we used unicorn colors and candy, but use whatever candies you like.  Maybe even theme out the colors for the Holidays or a Gender Reveal.  Try it out and let me know what you think.
