Fresh Recipe: Citrus Herb Chicken

As a mom I understand the struggles of balancing not only your work life and your home life but your children plus the struggles of life and then oh my goodness now I have to do dinner? Lol!!! Tupperware has some of the best weeknight solutions and this Citrus Herb Chicken is one of the favorite winners my hostesses request at my parties.

Citrus Herb Chicken

Citrus Sauce

1/2 cup fresh basil leaves
1 green onion
2 Tbsp. flat-leaf parsley
2 Tbsp. capers
1 Tbsp. fresh lemon juice
1 clove garlic, peeled
3 Tbsp. olive oil
salt and pepper to taste

Take the first seven ingredients and place in the base of your Chop ‘N Prep (or food processor) and blend to a coarse puree.  Transfer sauce to a small bowl and season with salt and pepper to taste.

Chicken and Vegetables

1 1/2 C. water
2 boneless, skinless chicken breasts
1/2 lb. fresh green beans, trimmed, or frozen whole green beans, thawed under warm running water.
1 red bell pepper, cut into strips
salt and pepper to taste
3 Tbsp. Citrus Sauce

Place water in water tray of steamer.  Place chicken in base of Tupperware Smart MultiCooker, season with salt and pepper, and brush with Citrus Sauce.  Place green beans and red pepper strips in Colander Tray.  Microwave on high for 14 minutes, or until chicken reaches an internal temperature of 165º F.  Remove chicken to serving platter and brush with more sauce.  Toss the vegetables with 1 Tbsp. Citrus Sauce and serve with chicken.

Fresh Recipe: Hot Cheese Puffs

I love to entertain and during the holidays that can make things a little chaotic juggling the kids, activities, family etc.  This family recipe of Hot Cheese Puffs is one that I can prep ahead of time and freeze.  So all I need to do is throw in the oven and enjoy.

Change it up by stuffing them with olives or jalapeños for a fun twist.

Hot Cheese Puffs

1/2 c butter
2 cups grated sharp cheddar cheese
1 c flour
1/2 tsp salt
1/4 tsp paprika

Cream butter and cheese. ((grate the cheese fresh from a block using Tupperware’s GrateMaster for the perfect consistency and less preservatives.)) Add remaining ingredients. Roll into pecan-sized balls. May be frozen or baked immediately at 350 for 12-15 mins.

Fresh Recipe: Cauliflower Fried Rice

I love Fried Rice, and I love Cauliflower –  so this simple, quick, gluten free Cauliflower Fried Rice Recipe is my go to for a warm comfort food meal when I also need to watch my waistline.

 

It is super simple to make and super yummy too!

CAULIFLOWER “FRIED RICE”

INGREDIENTS:

  • 1 medium head cauliflower
  • 1 tbsp coconut oil
  • 2 scrambled eggs (sub tofu for a vegan option)
  • 1 large egg
  • dash of ume plum vinegar (or a pinch of salt)
  • 1/2 small onion, diced fine
  • 1/2 cup peas (can be frozen)
  • 1/2 cup celery
  • 1/2 cup carrots
  • 2 garlic cloves
  • 1/2 cup onion
  • 3 tbsp low sodium soy sauce
INSTRUCTIONS
  1. Chop cauliflower using Tupperware’s PowerChef System (or by just pulsing some rough cut pieces in a food processor); the end product should resemble smallish grains of rice.
  2. Heat 1 tablespoon coconut oil in a large skillet over medium low heat until it liquifies. Add the onions and garlic and stir fry until fragrant, about 5 minutes. Add the carrots, celery and cauliflower to the pan; stir fry quickly to cook the cauliflower to a soft (but not mushy) texture.  Mix in Peas.
  3. Make a well in the middle, turn the heat down, and add the eggs. Stir gently and continuously until the eggs are fully cooked. Stir to combine all with soy sauce and enjoy.

Enjoy adding in your favorite protein and veg. Possible add-ins: baby corn, broccoli, cabbage, bok choy, water chestnuts, chicken, tofu, and shrimp!
