Fresh Recipe: Eggplant and Tomato Zoodles

Zoodles and more Zoodles –  Have you tried Zoodles?  I think I just like saying it – zoodles.  Okay seriously, I am in love with Tupperware’s Spiralizer and all that it can do. So for Fresh Tip Tuesday this week we made zoodles with grilled eggplant and a yummy grilled tomato sauce.  This one has a few steps and your microwave is in action, but the results were amazing and still less than 25 mins!  So fresh and healthy.  Try it out and let me know what you think!
Eggplant and Tomato Zoodles
Ingredients
1 small eggplant, peeled and sliced into 1/2″ cubes
1 medium zucchini, ends cut off, and cut in half
1/3 cup olive oil, plus a few tablespoons to drizzle
1 tsp italian herb seasoning
 2 cups (1 pint) cherry tomatoes
 1/4 onion (I prefer sweet)
salt and pepper
 6-10 leaves fresh basil
 Balsamic reduction (optional)

 

Directions
1) Start making the sauce.  Drizzle the cherry tomatoes with olive oil and a dash of salt, then cook for 8 mins in the MicroPro Grill.  Remove from microwave and let cool for 3 mins.

2) While it is cooking, assemble Fusion Master® Spiralizer fitted with the thin noodle blade and first front of zucchini. Turn handle until fully spiralized. Insert 2nd half and repeat. Put aside.

3) Transfer tomatoes to PowerChef System.  Add basil, onion and 1/3 cup olive oil, along with italian herb seasoning.  Pull cord 10 times til its blended but still chunky.

4) While the grill is still warm, add eggplant drizzled with some olive oil and sprinkle a little salt and pepper. Cook in MicroPro Grill for 8 mins.

5) Transfer zoodles to the base of the Smart Multicooker and toss with the tomato sauce. Microwave for 3-5 mins.

6) Add grilled eggplant to zoodles, toss and serve.  Top with fresh grated parmesan cheese and (optional) a basalmic reduction.  So yummy and so good for you!

Fresh Recipe: Mediterranean Quinoa

MEDITERRANEAN Quinoa

Ingredients:
1 cup quinoa
2 cup vegetable broth
1/2 cup chopped cherry tomatoes
1/2 cup chopped parsley and basil
1/2 cup cucumber
1/2 large avocado, diced
1/4 cup chopped red onion
1/4 cup lemon juice
1 TBSP extra virgin olive oil
1/2 tsp salt
1/4 tsp ground black pepper

**you can also choose to add red pepper, olives, etc

Directions:
◦ Combine broth and quinoa in Tupperware’s Microwave Rice Maker.
◦ Cook on High for 10 mins. Let sit for 5-10 minutes until fully hydrated.  Remove and fluff with a fork.
◦ Stir in tomatoes, parsley, basil, cucumber, red pepper, olives, and onion.
◦ Whisk together lemon juice, olive oil, salt and pepper, then pour over quinoa mix and stir again.
◦ Cover and let stand for an hour.
◦ Serve chilled or at room temperature.

Fresh Recipe: BBQ Jackfruit Sliders

Jackfruit is an exotic fruit grown in tropical regions of the world and a great vegan meat substitute.  It contains some of almost every vitamin and mineral that you need, as well as a decent amount of fiber and shown to help fight cancer.  Jackfruit is also shown to help control blood sugar which is why this SUPERFOOD is my Fresh Pick for this week’s Fresh Tip Tuesday.  I made a version of this BBQ Jackfruit Sliders – IE the BBQ Chicken Sliders – in the pressure cooker on WBTV and it had rave reviews.

BBQ Jackfruit Sliders
Ingredients
¾ cup ketchup
½ cup apple cider vinegar
½ cup light brown sugar
1 Tbsp. molasses
1 tsp. chili powder
20 ounces Young Green Jackfruit, canned and drained (I get mine from Trader Joes)

Instructions

  1.  In base of Microwave Pressure Cooker, stir together all ingredients except for the Jackfruit.
  2. Submerge chunks into sauce until they are covered in liquid. Seal and microwave on high power 10 minutes.
  3. Let pressure release naturally, until pressure indicator is fully lowered, before opening, about 8 minutes.
  4. Mix and shred jackfruit using the silicone spatula. Allow to cool slightly to thicken.
  5. Serve shredded jackfruit and vinaigrette coleslaw on buns and serve

**Recipe yeild 4 hamburger size buns or 8 slider buns**

Vinaigrette Coleslaw
Ingredients
½ cup apple cider vinegar
¼ cup vegetable oil
½ tsp. celery seed
½ tsp. black pepper
1 large green cabbage, about 1½ lbs./680 g, cored and quartered*
½ cup granulated sugar
2 tsp. coarse kosher salt
16-oz./455 g bag baby carrots

Instructions

  1. Combine vinegar, oil, celery seed and pepper in 1-Qt./1 L Micro Pitcher. Cover and place in freezer at least 15 minutes, or until chilled.
  2. Set Mandoline round knob to #2, triangular knob to “lock” and select the straight v-shaped blade insert.
  3. Attach 1 quarter of cabbage to food guider and slice. Repeat with remaining quarters.
  4. In a large bowl, toss cabbage with sugar and salt.
  5. Transfer to microwave-safe bowl. Cover and microwave on high power 1 minute. Stir and microwave 1½ minutes more. Cabbage should be wilted by about 1/3.*
  6. Spin cabbage in Salad Spinner (or dry with paper towels) to dry, about 30–60 seconds. Return to large bowl.
  7. Place carrots in base of Power Chef™ System, fitted with blade attachment. Cover and pull cord to process until carrots are roughly chopped. Add to cabbage.
  8. Remove vinaigrette from freezer and pour over cabbage mixture and toss. Serve immediately or thoroughly chill in fridge about 1 hour before serving.
