Fresh Recipe: Acorn Squash and Sweet Potato Soup

acorn squashThis week for Fresh Tip Tuesday I tackled my bag from Farm Fresh Carolina and decided it was a SOUP DAY using acorn squash! Also, my mini was sick, so she needed some liquid gold to help lift her spirits.  LOL

Ginger contains gingerol, a substance with medicinal properties and pairs will with acorn squash as well as sweet potatoes so it had to be included. I prefer using ginger paste, or fresh grated, but dried will work for the recipe as well.  If you do not have a Tupperware’s Pressure Cooker, you could use an InstaPot or the traditional method of roasting, blending, then simmering on the stove, just know it will take 3 times longer.

Acorn Squash and Sweet Potato Soup

1 acorn squash
2 medium sweet potatoes
1/4 cup onion, chopped
2-3 cups vegetable broth
1 tsp ginger, I prefer FRESH
1 tsp fresh thyme
1 (14 oz) can coconut milk, lite
1/4 tsp cayenne pepper
salt and pepper

Directions:

  1. Peel and cut squash and sweet potatoes into 1-inch chunks.
  2. Place squash, sweet potatoes, onion, spices and broth to cover in Tupperware Microwave Pressure Cooker.  Cook for 16 mins on high. (test to be sure squash is soft after pressure releases.)
  3. Scoop into thePowerChef System and process until smooth.  Add back to the pressure cooker and combine with coconut milk. Stir, season with salt, pepper and cayenne.
  4. Serve with artisan croutons.

Fresh Recipe: Unicorn Pinata Cupcakes

What can I say, my daughter LOVES unicorns.  So for Fresh Tip Tuesday I shared a super simple unicorn pinata cupcake recipe.  Did you know cupcakes were first invented in 1796 by Amelia Simmons? This icing is incredible, light and easy to make.  This version we used unicorn colors and candy, but use whatever candies you like.  Maybe even theme out the colors for the Holidays or a Gender Reveal.  Try it out and let me know what you think.

Fresh Recipe: Fiesta Gazpacho

Fiesta GazpachoIf you saw me this last week on WBTV you would know that tomatoes are in full swing and this simple and yummy Fiesta Gazpacho Recipe is perfect for all your local farmer’s market finds.

Fiesta Gazpacho is one of the recipes I share at our Passport to Flavor Tupperware Theme Parties. I had already known that tomatoes are full of vitamins, minerals and antioxidants. In fact, they are said to be more beneficial to your health than apples!   But after reading an article on the Huffington Post, I found they also can do more for your skin when sliced open. 1. Cleanse and tone skin.

Fiesta Gazpacho
Fiesta Gazpacho
4 large ripe tomatoes, roughly chopped
1 cup tomato juice
 2 tbsp. prepared horseradish
2 tbsp. Southwest Chipotle Seasoning*
2 garlic cloves, peeled
½ small red onion, roughly chopped
1 small cucumber, peeled and grated
½ jalapeño, seeded and roughly chopped
1 small red bell pepper, seeded and roughly chopped
¼ cup loosely packed cilantro
½ tsp. coarse kosher salt
1 tbsp. fresh lime juice
Optional toppings: Black beans Queso fresco crumbles Minced red onion Thinly sliced green onion Cilantro Sour cream Tortilla strips 
1. Add tomatoes, tomato juice, horseradish and seasoning in the base of the Power Chef® System fitted with the blade attachment. Cover and pull cord until tomatoes are semi-liquid.
2. Add garlic, onion, cucumber, jalapeño, bell pepper, cilantro, salt and lime juice. Cover and pull cord until finely minced and consistency of a thick soup.
3. Divide mixture into four equal servings. Serve cold or at room temperature with desired toppings. *
